The Gimbap Book

〈흑백요리사2〉의 '서울 엄마'로 알려진 우정욱 셰프의 특별한 김밥 레시피와 노하우를 한 권의 책으로 담았다. 우정욱 셰프는 현재 한식 다이닝 레스토랑 '수퍼판'의 오너 셰프이자 현대백화점 압구정점에서 프리미엄 김밥 전문점 '가지가지'를 3년째 운영하고 있으며, 최근 GS25 편의점과의 콜라보 김밥으로도 큰 인기를 끌었다. 1995년 대치동에서 가정 요리 수업을 시작해 25년간 '명문가의 요리 선생님'으로 불렸으며, 매일 먹어도 질리지 않을 만큼 김밥을 좋아한다는 저자가 오랜 시간 자신의 손끝으로 쌓아온 김밥의 기술과 노하우를 온전히 정리한 책이다.

김밥은 예로부터 한국인이 모이는 즐거운 자리마다 놓이는 음식이다. 생일과 잔칫날, 소풍과 운동회의 도시락까지 사람들이 모인 행사에는 언제나 김밥이 있었다. 한국의 냉동 김밥이 미국의 마트에서 완판되고, 김밥이 글로벌 K-푸드로 떠오른 지금, 이 책은 가장 한국적이면서도 문화가 담긴 음식을 한국의 독자들과 나아가 세계의 독자들에게 소개하고자 한다.

This book brings together the special gimbap recipes and know-how of Chef Woo Jung-wook, known as “Seoul Mom” from 〈Culinary Class Wars 2〉. Chef Woo is currently the owner-chef of the Korean dining restaurant “Superpan” and has been running the premium gimbap specialty shop “Gajigaji” at Hyundai Department Store’s Apgujeong branch for the past three years. More recently, her collaborative gimbap products with GS25 convenience stores have also gained widespread popularity. Beginning with home-cooking classes in Daechi-dong in 1995, she spent 25 years earning a reputation as a “cooking teacher to prestigious families.” A self-professed gimbap lover who says she could eat it every day without ever growing tired of it, Chef Woo has compiled in this book the techniques and know-how she has developed through years of hands-on experience.

Gimbap has long been a staple at joyful gatherings in Korea. From birthdays and celebrations to packed lunches for picnics and school sports days, gimbap has always had a place wherever people come together. Now that Korean frozen gimbap is selling out at supermarkets in the United States and gimbap is emerging as a global K-food favorite, this book aims to introduce Korean readers, and ultimately readers around the world, to one of Korea’s most quintessential foods, rich in both tradition and culture.
